Rio Olympic Games 2016: Flavours of Brazil

If you’re one of the dedicated spectators willing to stay up from midnight until 4am to watch the opening ceremony of the 2016 Rio Olympic Games, we thought we could tempt you with some Brazilian inspiration to get you through the night. Or if you can’t quite make it through the night, there’s plenty to get excited about over the coming weeks. So as the athletes limber up and the dancers polish their sequins, it’s time to show off your barbeque skills!

Meat stews, rice and beans are all part of Brazilian life and most dishes date back to the native indigenous people of South America before the country was colonised by the Portuguese. Pork, beef and fish are popular in Brazilian cuisine and there’s a carnival of flavours to accompany each dish. Rich and warm Dulce de Leche sticky caramel with fluffy pancakes, waffles and churros are a devilishly good way to hit that sweet spot in this part of the world. Savoury street snacks like Kibe which is a typical finger food made from minced lamb or beef and mixed with bulgur wheat and fried, perfect on the go for busy Brazilians!

‘Churrasco’ is the term for barbeque and Brazilians sure know how to operate a grill known as the ‘Churrasqueira’. Most Brazilian barbeque grills are supported with spits and skewers, and marinades are an integral part of flavouring the meats before placing and rotating them above burning embers.

Why not create your own ‘Churrasco’ this Olympic season and join in the fiesta of Brazilian food culture using your very own outdoor barbeque at home! Try accompanying your sizzling meats with a classic South American Chimichurri sauce made with Borderfields. It can be used for beef, chicken or pork to create a Brazilian ‘Rodizio’ (meat grilled on skewers!)

Chimichurri Marinade

  • 1 bunch flat leaf parsley trimmed stems and torn
  • 2 garlic cloves minced
  • 2 tbsp. of white wine vinegar
  • 4-5tbsp Borderfields Cold Pressed Rapeseed Oil
  • pinch of sea salt
  • 1/2 tsp. black pepper
  • 1/4 tsp. chilli flakes

Blitz all of the ingredients in a food processor and serve – it couldn’t be easier!
