ingredients

  • 900 g boneless skinless chicken breasts or thighs, sliced into strips
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • ½ sweet onion, sliced
  • 2 tbsp fajita seasoning (store-bought or homemade)
  • Borderfields Garlic Spray Oil (as needed)
  • Tortillas (flour or corn) to serve
  • Optional: lime wedges, salsa, cheese, fresh coriander

method

  1. Prep the basket: Lightly spray your air fryer basket with Borderfields Garlic Spray Oil.
  2. Mix: In a bowl, combine the sliced chicken, peppers, onion and fajita seasoning. Toss to coat evenly.
  3. Spray: Give the mixed chicken and veggies a generous spray of Borderfields Garlic Oil so everything has a light coating — this boosts flavour and helps crisping.
  4. Air fry: Cook at 190 °C (375 °F) for 12 minutes.
  5. Stir & spray: Halfway through cooking, open the basket, give everything a stir and spray again with a light coat of Borderfields Garlic Oil.
  6. Finish cooking: Continue for another 10–12 minutes or until the chicken is cooked through (internal temp at least 75 °C/165 °F).
  7. Serve: Warm your tortillas (you can air fry them for a minute with a little spray for crisp edges), then fill with chicken and veggies. Add lime, salsa or cheese if you like.
