KENNY ATKINSON’S CARROT CAKE

Carrot and Walnut Cake

INGREDIENTS

Cake

170gm sugar
170ml Borderfields oil
3 eggs
1 tsp vanilla essence
170gm plain flour
1 tsp bicarbonate of soda
1 tsp baking powder
1/2 tsp ground cinnamon
Pinch of salt
110gm chopped walnuts
225gm grated carrot

Icing

175gm cream cheese
175gm softened butter
250gm icing sugar
½ tsp vanilla essence
Chopped walnuts

METHOD

1. Beat the sugar, oil, eggs & vanilla until light and fluffy.

2. Mix the dry ingredients together and add in.

3. Add the chopped nuts & grated carrot and mix everything together.

4. Pour in to a square lined tin or paper cup cake moulds and bake in a pre heated oven on 180 degrees for approx. 20 mins.

5. Mix frosted icing ingredients together and spread liberally over the cake. Add chopped walnuts as a personal preference.
